I had this for breakfast because I got bored of my usuals, but it would make a fine lunch or dinner too. It’s easy and simple but so satisfying. Remember that the more things you add to a sandwich the more likely your wrap will break! Oh but it was worth it.
Halloum and Eggplant Sandwich
I had this for breakfast because I got bored of my usuals, but it would make a fine lunch or dinner too. It’s easy and simple but so satisfying. Remember that the more things you add to a sandwich the more likely your wrap will break! Oh but it was worth it.
Ingredients
For 1 sandwich:
- 1 tsp olive oil for eggplant
- 1 medium eggplant, peeled and sliced
- 100 g Halloum cheese, sliced
- 1 tomato, sliced
- 1 small bell pepper, sliced
- Mint leaves
- Olive oil for the sandwich
- Pinch of chili flakes
- Drizzle of pomegranate molasses
- Salt and black pepper to taste
- Bread or wrap of choice
Instructions
- Heat a pan and add 1 tsp of olive oil. Then add sliced eggplant and cook until browned on both sides. Before they’re completely cooked, move them to the side and grill your halloumi slices
- Get your veggies ready: bell pepper, tomato, and mint
- Assemble the sandwich: bread, eggplant, halloumi, tomato, bell pepper, mint, salt, pepper, olive oil, pomegranate molasses, and some chili flakes if you like the heat. Sahtein!
