What annoys me the MOST is seeing people overcook their broccoli until it’s pale and mushy, cook for five minutes only!

Asian-Inspired Broccoli Salad

Asian-Inspired Broccoli Salad

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 sliced Onion
  • 1 tbsp Minced Garlic
  • 1 tbsp Minced Ginger
  • 500g Broccoli
  • 2 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 1 tsp Cornsarch Mixed with 1 tsp of water
  • 1 tbsp Sesame Seeds
  • 1 tbsp Sugar/Honey Optional

Instructions
 

  • Heat the olive oil and add the onion slices. Cook on high until colored
  • Add the garlic and ginger. Cook for 1 minute
  • Add the broccoli and cook on high all throughout. Set the timer to five minutes, that’s how long you will cook the broccoli, not longer
  • On the side make the sauce by mixing the sesame oil, soy sauce and the cornstarch (mixed already with water). You can add honey or sugar here too, but I didn’t today. With 2 minutes to go on the timer add the sauce and cook. When the five minutes are over add the sesame seeds and serve

Notes

Enjoy this as a side or as a main dish. A good option would be to add 1/2 cup of cashews in the beginning with the onion and have a vegan meal
