Tuna Pasta Salad

Ingredients
  

  • 300-400 g Uncooked Pasta Cooked as per package instructions and cooled
  • 2 cans Tuna (I get the ones in brine)
  • 1/2 cobs Corn (Corn shaved off)
  • 1/2 Red Bell Pepper
  • 4-5 Cornichons (or 1 pickle)
  • 2 Green Chilis (No seeds, Optional)
  • 300 g Green Beans
  • 1 tsp Olive oil
  • 1 dash Salt

Dressing

  • 1 Lemon
  • 3 tbsp Olive Oil
  • 3-4 tbsp Yogurt
  • 2 tsp Dijon Mustard
  • 1/4 tsp Paprika
  • 1/2-3/4 tsp Salt
  • 1 sprinkle Black Pepper

Instructions
 

  • Cook the pasta and set aside.
  •  In the basket of an air fryer or an ovenproof dish, place the chopped green beans mixed with 1 tsp olive oil and 1/4 tsp salt. I cooked them for 12 minutes at 180C in my air fryer. Cool them once they’re done.
  • Chop all the veggies and mix the dressing ingredients together with a whisk or in a jar.
  • In a big bowl assemble all the salad ingredients and then pour the dressing on top. Mix and enjoy!

Notes

This is what I had in my fridge, you might use quinoa instead of pasta, halloum instead of tuna, and any grillable veggie instead of beans. The result will be delicious because the dressing is great, it is creamy without any of the usual heaviness. You can add parsley or dill, spring onions or chives. Enjoy!
