Description
Nothing beats a zaatar manoushe, except a zaatar manoushe loaded with veggies! I always like to addd whole wheat flour to my manoushe dough. It gives it a beautiful earthy texture. Here I added only one third of the total amount, the rest is bread flour. Don’t skip the bread flour it’s what makes it nice and chewy while the milk makes it soft and pliable.

Zaatar Manoushe
Ingredients
- 250 g White bread flour
- 125 g Whole wheat flour
- 250 g Milk
- 7 g Instant yeast
- 1 tbsp Olive oil
- 2 tbsp Sugar
- 1/2 tbsp Salt
Instructions
- Add the sugar, salt, and instant yeast to warm milk (about 40°C, should be a tad warmer than your finger). I usually leave it for a minute to see little bubbles, then I add the flours and the olive oil. Knead with hands for a bit then leave to rest in an oiled bowl, covered for about an hour in a warm place (or inside an oven that is off).
- You can make 12 little balls from this amount and then roll them out thick or thin, with a pin (or with your fingers) and cook each separately on a pan.
- Flip the dough only once and add your toppings once you flip. We too with our zaatar blend mixed with olive oil, or with cheese. Check the last video, I made them all cooked only halfway so I can store the rest in the fridge. Notice how soft the dough is.

1- Can substitute white bread flour with AP flour
