Add the sugar, salt, and instant yeast to warm milk (about 40°C, should be a tad warmer than your finger). I usually leave it for a minute to see little bubbles, then I add the flours and the olive oil. Knead with hands for a bit then leave to rest in an oiled bowl, covered for about an hour in a warm place (or inside an oven that is off).
You can make 12 little balls from this amount and then roll them out thick or thin, with a pin (or with your fingers) and cook each separately on a pan.
Flip the dough only once and add your toppings once you flip. We too with our zaatar blend mixed with olive oil, or with cheese. Check the last video, I made them all cooked only halfway so I can store the rest in the fridge. Notice how soft the dough is.
