Watermelon with Whipped Feta

Description

This is a fresh and summery salad that can be served for lunch or dinner, it is so light and so good. The whipped feta is creamy and salty and provides amazing contrast with the crunchiness of the cucumbers and the sweetness of the watermelon.

Whipped Feta and Watermelon

Ingredients
  

  • 180 g Feta Cheese
  • 120 g Labneh
  • 1 tbsp Honey
  • 500-600 g Watermelon
  • 1 pinch Chili Flakes (Optional)
  • 20 Leaves Mint
  • 2-3 Whole Cucumber
  • 1 tsp Pomegranate Molasses

Instructions
 

  • In a food processor, add labneh or sour cream, feta, honey, and chili flakes (if using). Process until thick and creamy, about 1 minute.
  • Cut up watermelon cubes, cucumbers, and chop the mint.
  • Layer the whipped feta and then arrange the watermelon, cucumber, and mint on top. Drizzle with pomegranate molasses and enjoy directly. Make sure your watermelon is already chilled because it makes all the difference. Enjoy!

Notes

1- Labneh can be substituted with Sour Cream
