In a food processor, add labneh or sour cream, feta, honey, and chili flakes (if using). Process until thick and creamy, about 1 minute.
Cut up watermelon cubes, cucumbers, and chop the mint.
Layer the whipped feta and then arrange the watermelon, cucumber, and mint on top. Drizzle with pomegranate molasses and enjoy directly. Make sure your watermelon is already chilled because it makes all the difference. Enjoy!
