Pan con tomate! I had this all the time when I lived in Spain, so simple and so good for breakfast (and lunch and dinner), of course this my take on it, the original is slightly different.

Pan Con Tomate aka my favorite Spanish breakfast
Ingredients
- Good quality bread
- Ripe tomatoes
- 1 garlic cloves
- Salt
- Extra virgin olive oil
Instructions
- Get the absolute best bread you can find. Cut it up into slices and toast it in a pan.
- While the bread it toasting, grate your extremely ripe tomatoes, get all the juices and none of the skin.
- Cut a garlic clove in half and rub it on one side of the toasted bread.
- Spoon your tomato sauce on top, add olive oil and sea salt (all very generously!). Enjoy on the spot!
