Remove the stalks and chop them. Brush the outer side of the mushrooms with olive oil, use about 2 tbsp here.
Then chop all the veggies into small cubes. In a pot, heat 1 tbsp olive oil and cook your veggies starting with the onion for 2 minutes alone and then adding everything else.
Add the minced garlic, salt, paprika, black pepper, chili flakes (if using). Then add the filling to your mushrooms, top with cheese, breadcrumbs, oregano and more olive oil (optional here).
Bake for about 30 minutes at 180°C until crispy and golden. They are low carb and can be served with grilled meats or pastas. Enjoy
