Stuffed Portobello Mushroom

Ingredients
  

  • 8 Mushrooms
  • 1 Onion (finely chopped)
  • 2 stalks Celery (finely chopped)
  • 1 Bell Pepper (finely chopped)
  • 1 bunch Kale (finely chopped)
  • 2 cloves Garlic (minced)
  • 100 g Shredded Cheese  (I used Parmegiano)
  • 1/2 cup Breadcrumbs (Optional)
  • 4 tbsp Olive Oil (in Total)
  • 1/2 tsp Oregano
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 1/4 tsp Black Pepper
  • 1 pinch Chili Flakes

Instructions
 

  • Preheat oven to 180° C.
  • Remove the stalks and chop them. Brush the outer side of the mushrooms with olive oil, use about 2 tbsp here.
  •  Then chop all the veggies into small cubes. In a pot, heat 1 tbsp olive oil and cook your veggies starting with the onion for 2 minutes alone and then adding everything else.
  • Add the minced garlic, salt, paprika, black pepper, chili flakes (if using). Then add the filling to your mushrooms, top with cheese, breadcrumbs, oregano and more olive oil (optional here).
  •  Bake for about 30 minutes at 180°C until crispy and golden. They are low carb and can be served with grilled meats or pastas. Enjoy
