Zucchini Apple Bread
There is nothing more awesome than serving kids eat vegetables they supposedly hate and hear them tell you how yummy they are! This zucchini apple bread is breakfast / snack goals. Full of vitamins from the zucchini and apple, but also warmth from the cinnamon, nutmeg and raisins.
Ingredients
- 3 koussas (about 250 g), grated
- 1 apple (about 180 g), grated
- 150 g (3/4 cup) sugar (I used brown)
- 80 ml (1/3 cup) olive oil
- 80 g (1/3 cup) yoghurt
- 2 eggs
- 1 tsp vanilla extract
- 190 g (1.5 cups) flour, sifted
- 2 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp baking powder
- ½ tsp salt
- 40 g (1/4 cup) raisins
- 35 g (1/3 cup) walnuts
Instructions
- Preheat the oven to 180C.
- Grate the zucchini and the apple. Place them in a cloth and squeeze water out of them as much as you can. Set aside.
- Then in a large bowl, mix all the wet ingredients with a spatula: the olive oil, yoghurt, eggs, vanilla, and sugar until they mixture is homogeneous.
- Add the dry ingredients: flour, salt, baking powder, cinnamon, and nutmeg. Mix with a spatula.
- Fold in the koussa, apple, raisins and walnuts
- Line a loaf tin with baking paper or brush it with tahini. Pour the batter and bake at 180C for about 45 minutes or until a testing skewer comes out clean.
