This salad is so healthy and tastes like actual sunshine in your mouth. It is so good for you and is the perfect side dish for some grilled chicken, or any other protein of your choice. This amount makes a lot for if you’re only 2-3 people, I suggest halving the quantity

Chickpea Quinoa Salad
Chickpea Quinoa Salad
Ingredients
- 1 cup Uncooked Quinoa
- 800g Chickpeas
- 1 cup Raisins
- 1 Red Capsicum
- 60ml Apple Cider Vinegar
- 90ml Olive Oil
- 2 tbsp Honey
- 8 springs Mint
- 8 springs Parcely
- 8 spring Coriander
Instructions
- Wash then cook the quinoa in 2 cups of water and half a tsp of salt. Then set aside to cool
- Open the cans of chickpeas and drain them from the water and wash the chickpeas with clean water. Set aside to drain well
- Chop the capsicum into small cubes
- Make the dressing by adding the vinegar, olive oil, honey, herbs and salt in a blender. I use my Nutribullet for this
- Layer the quinoa, chickpeas, capsicum and raisins in a big salad bowl and pour the dressing on top. Mix, chill, and serve after 2 hours
