Chocolate Pudding Cups

Description

This is a dessert you can make for unexpected guests. The dessert you can make for a dinner party where you want to end the meal on a light-ish note. The dessert you can make ahead of time and just forget about while it chills in the fridge. The recipe makes 4 cups and it is naturally gluten free and egg free too.

Ingredients
  

Pudding

  • 70 g Dark Chocolate
  • 20 g Unsalted Butter
  • 250 ml Milk (can sub with plant milk)
  • 50 g Sugar (any sugar will work)
  • 25 g Cornstarch
  • 1 tsp Vanilla Extract
  • 1 pinch Salt

Cream

  • 60 ml Cream
  • 1 tbsp Greek Yogurt
  • 1-2 tsp Powdered Sugar
  • 1 drop Vanilla Extract

Instructions
 

  • Chop the chocolate and melt it with the butter in a pan on low fire. Then add the milk, sugar, salt and cornstarch.
  • Bring it to a boil while continuously whisking. Then boil for 1 minute.
  • Stir in the vanilla extract and pour the pudding into 4 cups. Let it cool.
  • Add all the cream ingredients in a bowl and mix with a hand-mixer until stiff.
  • Top the pudding with the cream and decorate with berries and chopped chocolate. Store in the fridge for 2-3 days.
