Description
Hummus is a staple in our kitchens and our homes and we also have lots left over. I decided to make mine into a delicious sandwich with some grilled veggies.

Hummus Sandwich
Ingredients
- Hummus
- Baguette or Sourdough Bread Slices
- 1 clove Garlic
- 2 tsp Olive Oil Separated
- Salt
- Koussa
- Eggplant
- Bell Pepper
- Sundried Tomatoes in Oil or Fresh Tomatoes
- Lettuce Leaves
Instructions
- Slice your bread and rub a cut open garlic clove on the insides, then drizzle with 1 tsp olive oil. Grill in a pan.
- Slice up the vegetables and sprinkle with salt and remaining 1 tsp of olive oil. Grill in the same pan until cooked with some char.
- Layer your sandwich: bread, veggies, tomatoes, lettuce, and hummus. Enjoy!
