Apricot Cheerio Energy Balls

Description

I can’t get over how cute these energy balls look! Also, a note on apricots. The darker more brown ones are not treated with sulfur dioxide, so they’re healthier even if they don’t look as pretty as the soft bright ones.

Apricot Cheerio Energy Balls

Ingredients
  

  • 1 cup dried apricots (142 g) from
  • 3/4 cup raw cashews (96 g)
  • 1/4 cup rolled oats (25 g)
  • 3 tbsp maple syrup
  • 1/2 tbsp vanilla extract
  • Good pinch of salt
  • 1 cup @cheerios (30g)

Instructions
 

  • Add all the ingredients to a food processor and blend. Then shape into little balls and dip in Cheerios. Store in an airtight container. Enjoy anywhere.
