Description
Shish Tawouk, but make it into a salad. I got you sis, you want the flavor but none of the bread and fries. Add freekeh for good carbs, make the dressing good but not heavy, make the chicken aromatic, the salad herby, and add pickles if that’s your thing. It’s a full meal and it’s definitely fulfilling.

Shish Tawouk Salad
Ingredients
- Lettuce
- Cucumbers
- Tomatoes
- Parsely, spring onion, mint
- 0.5 cup freekeh, cooked in 1 cup water
- Chicken skewers, 2-3 per person
Dressing:
- Juice of 1 lemon, about 50 ml
- 50 ml olive oil
- 3 tbsp yogurt
- 0.5 tbsp each: salt, sumac, allspice
Instructions
- Cook the freekeh in water and a bit of salt and then leave on the counter to cool.
- Chop the lettuce, cucumbers, tomatoes, parsley, spring onion, and mint. I like to leave the mint and parsley somewhat large for texture.
- Mix all the dressing ingredients in a jar and shake.
- Assemble the salad ingredients, add pickles if you like, and enjoy with some shish tawouk from the previous recipe.
