Description
This is a spin off traditional tabbouleh, but it is so good and refreshing, make it in the summer when it’s light and breezy, or in the winter when you’re missing the sun.

Tabbouleh (but make it fruity!)
Ingredients
- 3 bunches of parsley, finely chopped
- 1 bunch of mint, finely chopped
- 3-4 spring onions, finely chopped
- 2 cups of chopped fruits: i used mango, kiwi, apple, peach. You can use whatever you like or have
- Quinoa, measure half a cup, wash it and cook it in 1 cup of water
Dressing:
- Lime juice (can sub with lemon) - 2 limes
- Olive oil - 4 tbsp or more
- Salt - 3/4 tsp
- 7 spices - 1/2 tsp
- Cinnamon - 1/2 tsp
- Zest of 1 lemon or lime
