Tabbouleh (but make it fruity!)

Ingredients

  • 3 bunches of parsley, finely chopped
  • 1 bunch of mint, finely chopped
  • 3-4 spring onions, finely chopped
  • 2 cups of chopped fruits: i used mango, kiwi, apple, peach. You can use whatever you like or have
  • Quinoa, measure half a cup, wash it and cook it in 1 cup of water

Dressing:

  • Lime juice (can sub with lemon) - 2 limes
  • Olive oil - 4 tbsp or more
  • Salt - 3/4 tsp
  • 7 spices - 1/2 tsp
  • Cinnamon - 1/2 tsp
  • Zest of 1 lemon or lime
