Description
We made these burgers last week, after a friend of mine told me she tried to make a vegan burger and it turned out to be horrible. These burgers are made with chickpeas and they are full of veggies. They can be eaten alone or with all the burger accessories. I like em both ways, but last night paired with a salad was on point too for a healthy weeknight dinner.

Veggie Chickpea Burgers
Ingredients
To make these you will need:
- 1 medium onion
- 2 medium carrots
- 2 medium koussa (or 1 zucchini)
- 10 button mushrooms (about half a box)
- 250 g cooked chickpeas
- 1 egg
- 1 cup (80g) breacrumbs (i used panko, you can use any)
- 3/4 cup (60g) parmesan cheese, grated
- 1 tbsp salt
- 1 tbsp garlic powder
- 0.5 tbsp black pepper
- 1.5 tbsp herbs of your choice (rosemary, thyme, oregano)
Instructions
Preparation:
- First we will either chop, grate, or process the veggies one by one until they are fine (but not liquidy). Then we will take them all (onion, carrots, koussas, mushrooms) and cook them in a pan with some oil until they are cooked. Add some of the salt required while cooking to help speed this up.
- Process or mash the chickpeas and place them in a bowl. Add the cooked veggies, egg, breadcrumbs, parmesan, salt, garlic powder, black pepper, herbs. It’s pretty versatile, so you can add the spices that you like. Mix this all together.
- Form the patties with your hands. In a shallow pan with little oil, cook them until golden and crispy. Enjoy them the way you like! I loved them like a regular burger but on their own as well.
Notes
These burgers can be frozen. I wrap each one in plastic film and then put them all in a bag.
