How cute is this cake? The 5 year old in me is in love ! I saw my friend Jessy @from_mykitchenwithlove make this cake and it’s been on my mind ever since. I made it yesterday and it was gone by today (to be fair it is kinda small ). I used honey instead of sugar to sweeten, and I’m sure you will love it, the texture is so fluffy. Adapted recipe below.

Strawberry Honey Cake
Ingredients
- 80 g (5 tbsp approx) butter, soft and room temp
- 140 g (1/3 cup + 2 tsp) honey
- 1 egg
- 1 tbsp vanilla
- 1 tbsp lemon zest (optional)
- 100 ml milk
- 180 g (1.5 cups approx) flour
- 1 tbsp baking powder
- 1/4 tbsp baking soda
- 1/4 tbsp salt
- 250 grams strawberries
Instructions
- Preheat oven at 160 degrees C. Sift the flour with the baking powder, baking soda, and salt. Set aside.
- Using a mixer attachment, beat the butter and lemon zest (if using) until fluffy. Then add the honey, egg, vanilla. Keep on mixing even if the mix is not entirely homogeneous. It will come together once we add the flour mix.
- Then alternate adding some of the flour mix and the milk until you’ve used them all.
- Pour in a lined (or buttered and floured) 20 cm x 20 cm cake pan and add your halved strawberries. Bake for 30-35 minutes or until a skewer comes out clean. Enjoy! xx
