Can I claim that these sea salt brownie cookies are better than those made by a famous bakery here? I can and I will… and I’m so excited to see what you guys think of them 😍 Please use the best chocolate you can find and NO CHIPS!

Sea Salt Brownie Cookies
Ingredients
- 150 g semisweet chocolate (50-55%) - you can use chocolate in the 70% range for a more intense taste
- 30 g (2 tbsp) butter
- 100 g (0.5 cup) soft brown sugar
- 1 egg
- 0.5 tbsp vanilla extract
- 20 g (3 flat tbsp) flour, you can sub with cornstarch for a #glutenfree option
- 0.25 tbsp baking powder
- 0.25 sea salt (if using table salt use half the quantity)
- Sea salt flakes for sprinkling
Instructions
- Melt the chocolate and the butter over a water bath (Bain Marie) while mixing gently. Make sure the water does not touch the other side of your bowl. Set aside when done.2- Using a mixer, beat the soft brown sugar and egg together until they are pale mixture with a ribbon consistency.
- Add the vanilla and the chocolate mix and fold in with a spatula.
- Finally pour the flour, baking powder and salt through a sieve and fold in.
- Wrap and chill the dough for 2-3 hours at least or overnight. The longer you chill the easier it is to handle.
- Using 2 teaspoons, spoon out the dough and place on a baking tray lined with paper. Keep 6 cm between each ball so they don’t flow into each other. Finally sprinkle with sea salt flakes and bake in a preheated oven at 180° C for 6-8 minutes. For larger cookies bake for longer of course and you can always bake 1 cookie first to figure out the right timing for you. Enjoy ❤️❤️❤️
