Mascarpone Cream Puffs

Description

This is such an easy and delicious dessert, I was mind-blown by the simplicity and the deliciousness of these puffs. I can’t wait to make them again next time I host friends over. This amount makes 20 small puffs, serving size is 2 puffs/ person if you can stop!

Mascarpone Cream Puffs

Ingredients
  

  • 400 g Puff Pastry Sheets
  • 250 g Whipping Cream 35% fat
  • 250 g Mascarphone Cheese (can sub with cream cheese)
  • 1 tsp Vanilla Extract (I used 1 vanilla bean)
  • 100 g Powdered Sugar (I used 80 only and you can go up to 120 for a sweeter version)
  • 1 pinch Salt
  • Fruits of your choice  I used mangoes and passion fruits but berries would be great here too
  • More powdered sugar to decorate

Instructions
 

  • Take the puff pastry out of the freezer the night before and leave them in the fridge to defrost slowly. On the day you want to make them, preheat the oven to 180C and take the puff pastry out of the fridge. If you are working with small sheets like I did, cut each one in half. If you are working with a big sheet (400 g), cut it into 20 rectangles. Better to work with them when they are a bit cold so the situation doesn’t get messy.
  • Place them on a baking tray lined with baking paper and pierce with a fork so they don’t expand a lot in the oven. Bake at 180C for 12-15 minutes until golden. Take them out and cool them before filling.
  • In the meantime, make the cream. Whip the whipping cream using a mixer, make sure the cream is cold (straight out of the fridge). As you are whipping, add the powdered sugar slowly in, and add a pinch of salt. Then once it thickens (soft peaks) add the mascarpone cheese by the spoonful while you continue to whip. Add your vanilla here too and continue whipping until it reaches stiff peaks. Careful not to over whip or leave the machine while you do this as it can over whip quickly and then there’s no saving it.
  • Fill the puffs by cutting them in half and adding the cream. Add the fruits of your choice after the cream, sandwiched in between the puffs and decorate with more powdered sugar. Enjoy directly!

Notes

You can prepare the parts beforehand and then assemble and serve, this way you can make them for a dinner party without any hassle. The puffs can be stored in an airtight container for 2 days, and the cream can be made on the same morning.
