Lotus Cake
Ingredients
- 113 g 0.5 cup unsalted butter, room temp.
- 100 g 0.5 cup sugar
- 100 g 0.5 cup soft light brown sugar
- 2 large eggs room temp.
- 100 g lotus spread
- 1 tsp vanilla extract
- 185 g 1.5 spooned and leveled cups flour
- 1.5 tsp baking powder
- 0.5 tsp salt
- 0.5 tsp cinnamon
- 160 ml milk room temp.
- 150 g lotus spread for topping and lotus biscuits if desired yes it is desired
Instructions
- Preheat oven to 175° and oil and line a loaf pan with baking paper.
- In a bowl sift the flour with the baking powder, salt and cinnamon. Set aside.
- Using a mixer, beat the butter until fluffy. Then add the sugars and continue beating until all is light and fluffy, about 4 mins. Make sure there are no sugar lumps left. Add the vanilla and the eggs one by one, and then once incorporated, add the lotus spread. Continue beating. Finally add the flour mix and the milk bit by bit, some of each until all is added. Do not overbeat - stop once it all comes together.
- Pour in the loaf pan and bake at 175° for about 40-45 minutes. Mine took 45. You can start checking at 35, especially if your loaf pan is rather big/wide.
- Once the loaf has cooled, microwave the spread for less than a minute and pour it on the loaf. It will dry and set quickly. You can add biscuits too. Enjoy
