Asian Noodle Salad
Ingredients
Salad
- 250 g noodles
- 2 carrots, thinly sliced
- 5 radishes, thinly sliced
- Half red cabbage, thinly sliced
- 2 spring onions, thinly sliced
- 1 bunch coriander
Dressing
- 2 tbsp almond butter
- 1 tbsp sesame oil
- 1 tbsp honey
- 3 tbsp apple cider vinegar
- 4 tbsp (60 ml) soy sauce
- 0.5 tbsp sriracha
- 1 garlic clove, minced
- 2 cm ginger piece, minced
Instructions
- Cook the noodles as per package instructions and then wash with cold water and set aside to cool.
- Chop up the veggies.
- Add all the dressing ingredients to a jar then shake it well. Taste and adjust to your preferences.
- Mix all the veggies and add the dressing. Chill the salad for 30 minutes and serve. Enjoy!
