Asian Noodle Salad

Ingredients

Salad

  • 250 g noodles
  • 2 carrots, thinly sliced
  • 5 radishes, thinly sliced
  • Half red cabbage, thinly sliced
  • 2 spring onions, thinly sliced
  • 1 bunch coriander

Dressing

  • 2 tbsp almond butter
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 3 tbsp apple cider vinegar
  • 4 tbsp (60 ml) soy sauce
  • 0.5 tbsp sriracha
  • 1 garlic clove, minced
  • 2 cm ginger piece, minced

Instructions

  • Cook the noodles as per package instructions and then wash with cold water and set aside to cool. 
  • Chop up the veggies.
  • Add all the dressing ingredients to a jar then shake it well. Taste and adjust to your preferences.
  • Mix all the veggies and add the dressing. Chill the salad for 30 minutes and serve. Enjoy!
