Description
Good-for-you cookies cannot be compared to the buttery chocolatey ones. The comparison isn’t fair. But that doesn’t mean that they aren’t awesome in their own way. I had this talk with the kids this morning, who started off not wanting to touch them, and ended up each having one for breakfast. The conclusion? Healthy cookies are packed with good ingredients and can double up as yummy breakfast. They are gluten free, dairy free, and refined sugar free too. A bit chewy from the almond flour, cinnamon-y, and so good.

Almond Cinnamon Cookies
Ingredients
- 120 g (1.25 cups) almond flour
- 55 g (0.5 cup) oat flour
- 40 g (0.5 cup) rolled oats
- 75 g (0.5 cup) coconut sugar (any sugar works)
- 42 g (0.25 cup) coconut oil
- 1 egg
- 1 tbsp cinnamon
- 1 tbsp vanilla extract
- 0.75 tbsp baking soda
Instructions
- Preheat the oven to 180° C. If you don’t have oat flour, crush some oats in a food processor.
- Mix dry ingredients together in a bowl: almond flour, oat flour, oats, sugar, cinnamon, baking soda.
- add the wet ingredients, the oil, egg and vanilla, and mix them with a spoon or clean hands. I like to do it with my hand.
- No chilling needed, bake immediately by forming medium sized balls and pressing them flat on your baking tray (lined with baking paper). Bake for 10-12 minutes, recipe made 16 cookies. Enjoy 😌
