Preheat the oven to 180° C. If you don’t have oat flour, crush some oats in a food processor.
Mix dry ingredients together in a bowl: almond flour, oat flour, oats, sugar, cinnamon, baking soda.
add the wet ingredients, the oil, egg and vanilla, and mix them with a spoon or clean hands. I like to do it with my hand.
No chilling needed, bake immediately by forming medium sized balls and pressing them flat on your baking tray (lined with baking paper). Bake for 10-12 minutes, recipe made 16 cookies. Enjoy 😌
