Almond Cinnamon Cookies

Ingredients

  • 120 g (1.25 cups) almond flour
  • 55 g (0.5 cup) oat flour
  • 40 g (0.5 cup) rolled oats
  • 75 g (0.5 cup) coconut sugar (any sugar works)
  • 42 g (0.25 cup) coconut oil
  • 1 egg
  • 1 tbsp cinnamon
  • 1 tbsp vanilla extract
  • 0.75 tbsp baking soda

Instructions

  • Preheat the oven to 180° C. If you don’t have oat flour, crush some oats in a food processor.
  • Mix dry ingredients together in a bowl: almond flour, oat flour, oats, sugar, cinnamon, baking soda.
  • add the wet ingredients, the oil, egg and vanilla, and mix them with a spoon or clean hands. I like to do it with my hand.
  • No chilling needed, bake immediately by forming medium sized balls and pressing them flat on your baking tray (lined with baking paper). Bake for 10-12 minutes, recipe made 16 cookies. Enjoy 😌
