Description
Egg fried rice. The easiest and most versatile thing you can put together. Serves 4, zero leftovers.

Egg Fried Rice
Ingredients
- 2 tbsp oil
- 1 tbsp butter (can replace with oil)
- 5 eggs
- 300 ml rice
- 250 g mushrooms
- 200 g I used broccolini
- 1/2 a cup of corn. USE ANY VEGETABLES.
- 3 garlic cloves, mashed
- 1 tbsp dark soy sauce
- 2 tbsp regular soy sauce
- 1 tbsp oyster sauce
- 2 tbsp sesame oil
- Spring onions (I only had chives) + sesame seeds for serving
- Cracked pepper to taste
Instructions
- Cook the rice and set aside.
- In a big iron skillet, or a non stick pan melt 1 Tb oil + 1 Tb butter. Beat your eggs and add them when the pan is hot. Scramble eggs, then remove.
- In the same pan, add 1 Tb remaining oil and cook the veggies. Add the garlic halfway through.
- Add the rice, eggs, sauces, sesame oil and continue cooking till the rice crisps up a bit.
- Add pepper, spring onions, sesame seeds, and serve.
Notes
- this is a healthier version of takeout, if you want something more like takeout just triple the butter and oil 😁
- add any leftover protein
- use any rice, leftover rice, new rice, etc.
