Description
We love corn at home. I have the habit of buying corn on the cob on a weekly basis, cooking them, and then snacking on them all week. We made corn fried rice this time and enjoyed it as a side with some delicious salmon.

Corn Fried Rice
Ingredients
- 1 tbsp Olive Oil
- 1 Onion (Sliced)
- 2 tsp Minced Garlic
- 1 tsp Minced Ginger
- 3 cobs Corn cooked or uncooked both work
- 3 cups Cooked Rice
- 60 ml Soy Sauce (¼ cup)
- 15 ml Lemon Juice (1 tbsp)
- 3 Onion
- 1 tbsp Sesame Seeds
- 1 tsp Toasted Sesame Oil (if you don't have, skip)
- 1 pinch Chili Flakes (optional)
Instructions
- Cut the corn cobs. If they are not cooked it is not a problem they will cook in the pan.
- In a large pot, heat up the olive oil and then add the onion and cook through. Add the corn, and heat it if it is cooked. If it is uncooked, cook it in the pan on medium heat. Then add the minced garlic and ginger.
- Add the soy sauce, lemon juice, and mix them in. Then add the rice and mix until everything is hot.
- Top with spring onion, sesame seeds, and toasted sesame oil. Add a pinch of chili flakes if you like too. Enjoy!
