The Almost Original Speculaas Cookies

Ingredients

  • 150 g unsalted butter
  • 200 g (1 cup) dark brown sugar (regular brown will work too)
  • 1 tbsp milk
  • 2 eggs
  • 300 g (2 cup + scant half cup) flour, for a chewier cookie use “00” flour
  • 2 tbsp baking powder
  • 2 tbsp cinnamon
  • 1 tbsp Lebanese 7 spices (the original speculaas mix is quite similar so i figured i’d save you all the hassle!)
  • 0.25 tbsp salt

Instructions

  • Sieve the flour, baking powder, cinnamon, 7 spices, baking powder, and salt in a bowl. Mix them together and set aside.
  • Using a stand / hand mixer, beat the butter and then add the sugar. If the sugar is clumpy, try to break up the clumps.
  • Mix them together for about 3 minutes, then add the milk, eggs, and continuing beating for about 2 minutes.
  • Add the flour mix and beat only until incorporated. Do not over-beat.
  • Take the dough and split it in 2 parts and roll it into 2 logs using baking paper. Freeze them until hard.
  • In a preheated oven at 180°C, slice each cookie at about 1 cm thickness and bake, time depends on size, but about 12 minutes should be good. Sahtein!
