Shortcut Speculaas Cookies

Ingredients

  • 150 g Unsalted Butter
  • 200 g Dark Brown Sugar (regular brown will work too)
  • 1 tbsp Milk (or cream)
  • 2 Eggs
  • 300 g Flour (for a chewier cookie use "00" flour)
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 tsp Lebanese 7 Spices (The original speculaas mix is quite similar so i figured i'd save you all the hassle!)
  • ¼ tsp Salt

Instructions

  • Sieve the flour, baking powder, cinnamon, 7 spices, baking powder, and salt in a bowl. Mix them together and set aside.
  • Using a stand / hand mixer, beat the butter and then add the sugar. If the sugar is clumpy, try to break up the clumps.
  • Mix them together for about 3 minutes, then add the milk, eggs, and continue beating for about 2 minutes.
  • Add the flour mix and beat only until incorporated. Do not over-beat.
  • Take the dough and split it in 2 parts and roll it into 2 logs using baking paper. Freeze them until hard.
  • In a preheated oven at 180°C, slice each cookie at about 1 cm thickness and bake, time depends on size, but about 12 minutes should be good. Sahtein!
