Peanut Butter Chicken

This is a dish that we have been making at home for so long. It is my joker card, the one I take out when I'm out of ideas and in no mood for complaints because everyone eats it, and happily so.

Ingredients

  • 2 tbsp coconut oil, can sub with olive oil
  • 1  onion, finely chopped
  • 1 tbsp ginger, grated
  • 3 garlic cloves, minced
  • 1 kg chicken breast, sliced
  • ¾ tsp salt for chicken and more for the sauce
  • 1.5 tsp cumin powder
  • 1.5 tsp curry powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • ¾ tsp all spice
  • 1 can  chopped tomatoes (400g)
  • 1 can coconut cream (400g)
  • 3 tbsp peanut butter
  • 1 tsp honey

Instructions

  • Cut the chicken into strips and season with ¾ tsp salt and all the spices.
  •  Place 1 tbsp coconut oil in the pot and cook the chicken thoroughly.
  •  Remove the chicken and place aside, then in the same pot put another tbsp of coconut oil and then add the chopped onion.
  • Cook the onions for 5 minutes on medium heat and then add the ginger and garlic and cook for an additional minute. Then add the tomato can, coconut cream can, bring to a boil and then add back the chicken strips.
  • Add peanut butter and honey, and taste to adjust salt levels.
  • Sprinkle chopped coriander and salted peanuts on top.Serve with basmati rice and enjoy!
