In a small bowl mix the yogurt with the lotus spread. Then spread out 10 Lotus biscuits in a pan that will go to the freezer.
Spoon the Lotus-yogurt mix on the biscuits, each biscuit can take about 2 teaspoons. Slide in a wooden stick into the yogurt. Then add a cookie on top to cover each one.
Freeze for about an hour. Once they are frozen, chop up the chocolate. I used 70% dark but you can use any chocolate, even white. Then in a small bowl, add the coconut oil and melt them together in the microwave.
Dip the ice cream sticks in the chocolate and then decorate with crushed Lotus biscuits. Freeze again for 15 minutes or until serving. They are amazing and will definitely be on my list all summer long.
