Garlic Naan

Ingredients

To begin:

  • 2 tbsp instant yeast
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 cup warm water

To add after blooming:

  • 1/3 cup warm milk
  • 2 tbsp yogurt
  • 3 tbsp olive oil
  • 2 garlic cloves, grated or smashed
  • 425 g flour (3 and 1/3 cups) + extra 2-3 tbsp

Nigella seeds before baking

To spread:

  • 3 tbsp butter
  • 2 tbsp minced garlic
  • Coriander, optional

Instructions

  • in the bowl of your mixer add the yeast, salt, sugar and warm water. Wait 10 minutes for the yeast to bloom.
  • add the warm milk, yogurt, olive oil, mashed garlic and flour.
  • knead on medium high with a dough hook for about 10 mins. Add the 2-3 tbsp towards the end so the dough isn’t sticky, if needed.
  • cover and let it rest for 90 mins or until it’s huge.
  • oil your clean surface and your hands, cut and shape into 8 balls.
  • rest for 15 minutes.
  • pull and tug to shape, try not to deflate the bubbles, sprinkle with nigella seeds if you like (I love).
  • cook on a very hot pan, flipping only once.
  • brush with the butter garlic mix and sprinkle coriander leaves. Enjoy warm! Sahtein 😍

Notes

if you want regular naan, skip the garlic in the dough and don’t brush any in the end.
