Easy Peasy Key Lime Pie

Ingredients

  • 240 g digestive type biscuits
  • 95 g butter, melted
  • 300 ml whipping cream 35%
  • 397 g Nestlé sweetened condensed milk
  • Zest and juice of 5 limes
  • 1 tbsp vanilla
  • 1/4 tbsp salt

Instructions

  • Blitz the biscuits, add the melted butter and mix them well. Pour into a pie dish (23 cm or slightly bigger). Press down to compress with a spoon or the bottom of a cup, and put it in the freezer while you prep the filling.
  • With the whisk attachment of any mixer, mix the cream while adding the Nestlé condensed milk. No need for it to increase in volume. Then add the vanilla, salt and zest. Finally add the lime juice and watch the mix thicken before your eyes. Stop once it’s mixed. Add it to the crust and pop the pie back in the freezer for 30 minutes. And that is it!

Notes

If you like, you can replace the limes with lemons and you’ll have an equally delicious dessert, but pay attention that lemons are bigger so 3 lemons should be enough.
