Healthy date maamoul! So yummy and easy to make! The recipe is naturally gluten free, dairy free, and direct sugar free too

Vegan Date Maamoul
Ingredients
Vegan Date Maamoul
- 150 g (1.5 cup) rolled oats or oat flour (use gluten free ones if that is a concern)
- 92 g (1 cup) blanched almond flour
- 75 ml coconut oil
- 1/2 tbsp mahlab
- 1/2 tbsp baking powder
- 2 tbsp rose water
- 1 tbsp orange blossom water
For the filling:
- 265 g pitted medjool dates (about 15 pieces)
- 1/4 tbsp mahlab
- 1 tbsp orange blossom water
- 1 tbsp rose water
- 1 tbsp coconut oil
Instructions
- Preheat oven to 180°C. In a food processor, process oats until very fine, leaving as little pieces as possible. I did this for 8 minutes. Then add almond flour, coconut oil, rose water, orange blossom water, mahlab, and baking powder. Add them all and process till the dough comes together. This will happen relatively quickly. Take out of the food processor, cover and set aside.
- Remove the pits from the medjool dates (don’t use other dates as the consistency of the paste will change) and process until pasty. Then add the mahlab, orange blossom water, rose water, and coconut oil.
- here you have the choice to make the maamoul with the filling inside the dough as one would traditionally. It does take some practice or you can use your moulds if you have them but I didn’t. The other option is to mix the shell and the filling together and then shape. This option is faster but I preferred the texture of the original method. I made about 22 maamouls and baked at 180°C for 15-18 minutes. Store in an airtight jar and enjoy!
Notes
Mahlab is a Middle Eastern spice that comes from the pits of a cherry tree species, it is bitter on its own but adds a wonderful and distinct flavor here. In the West, you can find it at any Arab convenience store.
