Description
These cookies are delicious, you can make them in one bowl without the need for a mixer. Then chill the dough for a bit and just bake. I added chocolate but you can add raisins, of course, that would go really well here too.

Brown Butter and Oat Cookies
Ingredients
- 110 g (1 cup less 1 tbsp) unsalted butter
- 110 g (1/2 cup) brown sugar
- 50 g (1/4 cup) white sugar
- 1 egg
- 1 tbsp vanilla extract
- 40 g rolled oats, powdered
- 132 g (1 cup) flour
- 1/2 tbsp salt
- 1/4 tbsp baking soda
- 150 g chocolate of your choice, chopped
Instructions
- In a food processor, process the oats until they are like a powder. In a little saucepan, melt the butter until it is bubbly. Then remove it from the heat along with all the browned bits.
- In a mixing bowl, add the sugars to the browned butter and beat with a hand whisk, then add the egg and the vanilla and continue whisking.
- Then add the oats, sieve the flour and add that too along with the baking soda and salt.
- Mix in the dry ingredients and then the chopped chocolate. Chill the dough for a minimum of an hour before baking. I like to weigh my cookies, if you do so you will get 12 cookies of 36g each.
- Bake them on a baking tray, in a preheated oven, for about 8-10 minutes.
