Description
This recipe is my grandma’s signature! It’s been in the family for a long time and we have been making it for as long as I can remember. The ingredients put together create kitchen magic. I will half the recipe for you, so you can make it for 2-3 people, or just double everything and feed a crowd like I do. Origininally, my teta would make this with drumsticks and no veggies. i like veggies, especially with the sauce. I made it with potatoes, carrots, onions and beets. I also added an entire garlic bulb cut in half. As with all things food: you do you. Whole chicken or pieces, veg or not, the most important thing is the marinade.

Teta's Chicken Marinade
Ingredients
- 1 whole chicken (hormone free, antibiotic free)
- 1 kg mixed veggies (any of the following: potatoes, carrots, beets, onions). I did a majority of potatoes, little beets and carrots, and one onion), cubed small for the potatoes, and bigger for veggies that require less time cooking, like carrots and beets. Quarter the onion if using.
- Some olive oil for topping right before you bake
Marinade:
- 50 ml lemon juice (keep squeezed lemon halves)
- 70 g (1/3 cup) tomato paste
- 3 garlic cloves (or more)
- 1 tbsp table salt
- 3/4 tbsp cumin
- 1 tbsp full dried mint (not fresh)
- 1/4 tbsp white pepper
Instructions
- Preheat the oven to 200°C, and chop all the veggies. Put your potatoes in water to avoid them browning (take them out and dry them immediately before using).
- Mix all the marinade ingredients together.
- In an ovenproof dish place your chicken in the center and pat it dry. Add the squeezed lemon halves in the cavity of the chicken, and if you like you can tie the legs together (breast side up).
- Add the veggies all around and using gloved hands mix the marinade into the chicken and veggies. Make sure to get into every corner.
- Bake for about an hour at 200°C , uncovered at first and then cover when your chicken begins to brown. I was late in covering mine! You do not need to add any water in the pan as the veggies will ooze water and it will be enough for everything to cook nicely. Sahtein!
