I’ve got a great side dish for your next Iftar spread: Tandoori cauliflower “steaks”, so flavorful with rice as a meal or just as a fun side.

Tandoori Cauliflower Steaks

Cook Time 45 minutes

Ingredients
  

You will need:

  • 1 large cauliflower head (or 2 small)
  • 1 cup yoghurt
  • 1 tbsp honey
  • 1 tbsp grated ginger
  • 1 tbsp mashed garlic
  • 1 tbsp salt
  • Juice of 1 lime or lemon
  • 1.5 to 2 tbsp tandoori masala (depending on how 🔥 you like it)

Heat these spices until fragrant:

  • 8 dried red chilis
  • 1 tbsp cumin seeds
  • 1 tbsp fenugreek seeds
  • 1 tbsp black peppercorns
  • 4 whole black cardamom pods
  • 2 cinnamon sticks
  • 10 cloves

Then grind and mix with:

  • 1/8 tbsp nutmeg
  • 1/8 tbsp turmeric
  • 1 tbsp ginger
  • 3 tbsp sweet paprika
  • 1 tbsp salt

Instructions
 

  • Cut cauliflower into 2-3 cm steaks. Brush the above mix on them generously, then (also generously 😅) add some olive oil and bake for 45 minutes in a preheated oven at 210°C. Serve with extra lemon, yoghurt and fresh coriander. Wish I had some pomegranate seeds to top them off as well.
    You can buy tandoori masala spices, but if you want to make your own, see below. This blend is out of this world

Notes

Use some in this recipe and store the rest in an airtight jar!
