This is such a refreshing and delicious snack. It makes 2 servings, one for you today and one for you tomorrow. Double or triple the recipe as needed.

Mango Chia Pudding
Ingredients
- 1 Medium Sized Mango
- 1.25 cup Plant Milk
- 4 tbsp Chia Seeds
- 1 tbsp Honey or Maple Syrup
- ¼ tsp Vanilla Extract
- Fruits and Nuts of your choice
Instructions
- In a blender or food processor, process the mango slices with the ¼ cup plant milk until pureed. Set aside.
- In a glass container mix the chia seeds, honey, vanilla, and milk all together. Pour each half in a serving cup. Top the chia mix with the mango mix, cover each cup with plastic film and refrigerate for a minimum of 1 hour or overnight. Top with fruits, berries, nuts, or granola and enjoy as a breakfast or a snack.
